Blue Apron offer their vegetarian recipes as part of their Classic Plan for two people. In terms of variety, Blue Apron offers at least three vegetarian meals every week. These include a broad range of styles that are influenced by cuisines from all over the world. You will find Mexican oriented dishes like tacos or quesadillas and European and Mediterranean inspired dishes like creative pizzas, amazing pastas and vegetarian pies.  There are also Asian style dishes such as noodle and rice dishes, vegetable buns and so much more. All dishes are incredibly creative and are designed by a team of professional chefs to ensure their perfection.

The quality of ingredients delivered in Blue Apron vegetarian recipes is always of the highest standard. Ingredients include farm-fresh eggs, vegetables that are always fresh and often organic, quality fine cheeses like goat’s cheese, whole grain pastas and more.

Another great feature of the Blue Apron meal kit service is the availability of a wine matching service for each dish. You can either buy the wine at the local store or simply and conveniently subscribe to the Blue Apron Wine service and order those wines that match your meals and have them delivered straight to your doorstep.

The calorie count of the meals ranges anywhere from between 550 to 800 calories per serving. If you are concerned about calories you can easily see the full calorie and nutritional breakdown of each recipe on the website or app before making your meal kit selection.  From our experience, the vegetarian meals offered by Blue Apron are always very satisfying and you never feel hungry after finishing a Blue Apron meal.

Main notes: This dish was very good and the surprising Asian Japanese flavors added an interesting dimension. This was a fried rice with a delicious twist. I loved the freekeh which is a type of toasted wheat. It added a super tasty earthy flavor. The dish was full of fresh vegetables and the broccoli, carrots and snow peas were of a great quality. Also, the fresh ginger gave a nice zest to the dish. You could easily make this one without the egg and then it would also be a vegan dish. It was very satisfying and super yummy!

Main notes: This was a great dish! Adding capers and Verjus Blanc (which is white grape juice) was not something I would ever think of adding to a pasta! But I was pleasantly surprised and would try this addition again! It added a defined but delicate ‘sour edge’ to the dish. This sort of discovery is a great example of one of the main things that I  love about using meal kit services. Using them expands your horizons by introducing you to new ways of cooking and opens a world of different flavors! The finishing touch with the buttered walnuts was also amazing, and afterwards, there was a fragrant buttery and nutty aroma in the house.

Name of dish: Kale and Ricotta Tarts

Cooking time: 40 minutes

Main notes: I decided to make this dish as part of my Thanksgiving dinner, and it was delicious and a great addition to a very special celebration! The filling was light and creamy and not too bitter which it can sometimes be when it comes to kale. That was a very good indicator that the kale was fresh and of the highest quality. The standard of the dough of the tarts that were provided by Blue Apron was also excellent. It was flaky and delicious. The butter lettuce as a side dish was a lovely finishing touch and the lettuce was super fresh. Bottom line – I absolutely loved it!
