Indian-Style Beyond Burger

This was one of our favorites. Having a meat-free burger can be quite dull and tasteless. However, the Beyond burger could have fooled us because it tasted exactly like meat. It’s hard to believe that Beyond meat is 100 percent plant-based.

The contrast between the sweet mango chutney and creamy yogurt added something to the dish that you never thought it needed, but it worked so well. 

Finally, the use of vadouvan curry powder on the sweet potatoes gave the meal its Indian flavor and complimented the sweet potatoes really well.  

Overall, this was an excellent meal that we thoroughly enjoyed. It was prepared in less than 30 minutes and was enjoyed guilt-free as the whole meal added up to 740 calories per serving.

Fresh Basil Fettuccine

If you love Italian style pasta, then this is the dish for you. We adored the flavors that made up the sauce. The dish is so simple yet so perfect. We can’t fault it. The sauce was made by cooking fresh tomatoes and basil with beautiful zucchini, fragrant garlic, and a pinch of crushed red pepper.

All these ingredients aided in making a fresh, tasty sauce that went down very well with the Fettucine. The flavors are perfectly balanced.

Moreover, the dish is not only vegetarian but part of Blue Apron’s Mediterranean Meal Kit. This allows you to open your palate to different types of food. Included in this, you are able to experience vegetarian comfort food, while still eating healthy and nutritious food that’s tasty.

Black Bean And Zucchini Enchiladas

We found the recipe very simple and easy to follow, but that doesn’t mean it wasn’t delicious.  This tasty dish takes 40 minutes to make and is perfect if you feel like indulging while still focusing on food that is going to better your well-being. We are massive fans of this meal!

These meat-free Mexican style enchiladas are made with black beans, red quinoa, and zucchini. Not only does it pack a punch of flavor, but it packs a whole bunch of nutrition in as well. All the flavors work well together and aid in creating a wonderful meal that can be enjoyed by the whole family.
