I love tacos!
Sometimes they make the perfect dinner – so easy and delicious. To be honest, I have never made tacos with BBQ sauce, so I was intrigued by this recipe when I saw it on the Blue Apron weekly menu. I am very happy to say that it did not disappoint as it was delicious.
First, the chicken that was provided by Blue Apron was lovely and tender. As a bonus , the BBQ sauce with the addition of pickled jalapenos was great – nice and spicy, which is just the way we like it! Second, the cheesy baked tortillas were great – they were half crunchy and had a delicate melted cheese flavor that combined perfectly with the chicken. The slaw was nice – even though we received a white cabbage rather than the red cabbage that was mentioned in the recipe. Personally, I would prefer a red cabbage as it is much more flavorsome in a recipe such as this.
Lastly, the sweet potato wedges really suited the BBQ sauce perfectly. We received a very generous portion of two mid-size sweet potatoes, and we loved the flavors from the spice blend.
Overall, another very pleasing dish from Blue Apron.
