This wholesome salmon dish gets a great Mexican kick from the creamy chimichurri sauce, made with fresh herbs and creamy avocado mayo.  The roasted sweet potatoes & bell pepper as light and super healthy veggie boost side, topped with toasted pepitas and cilantro, match just perfectly.

The meal was super easy to prep and cook. The sweet potatoes arrived pre-peeled and pre-cut, and the chimichurri sauce came prepared. The only thing we were left to prep was cutting the green peppers, seasoning, and roasting the veggies, salmon, and pepitas. In less than 30 minutes, the meal was ready to serve and eat.
