It was not only delicious to taste but a treat for the eyes as well. The ground beef patties, seasoned with southwest spices and chimichurri sauce, were tender, juicy and yummy. We also loved the twist of the roasted bell pepper ‘buns” and red pepper ketchup.
You can also never go wrong with classic roasted sweet potatoes to complete a perfect meal. The meal was very easy to prepare and took only 30 minutes until it was ready.

We started by roasting the sweet potatoes and green peppers. While these were roasting, we seasoned the beef and formed the patties, searing them on a pan for a few short minutes then roasting them in the oven. The last stage of this very easy meal preparation was cooking the onions and red peppers, and plating. The meal was super easy and delicious! Another great thing about this dish is that it is very low on the calorie count, with only 530 calories per serving.
