The Cooking Process

Step One

Today I chose to cook this Thai-style dish offered by Hello Fresh. I love sea food, and love the spiciness that my Thai cousin has to offer, so I was really looking forward to getting this and making it!

As always, I like to start the cooking process by laying all the ingredients out on the counter, cleaning the bok choy a little bit, and washing the shrimps.

Step Two

I placed the rice with 1.25 cups of water and a pinch of salt in a small pot. Cooking it like instructed for 15 minutes or so, then let it rest in a closed pot.

Step Three

While cooking the rice, I prepared all the veggies – thinly sliced the bok-choy, chili and scallion, and cut the lime into wedges.

Step Four

After that, I placed the washed shrimps in a small bowl with the cornstarch, salt and pepper and tossed it until it was fully coated. Then I put a bit of a vegetable oil in a medium pan, added the scallion whites, tossing it for a minute or so. Next, I added the shrimps and tossed it until pink in colour for 2-3 minutes.

Step Five

I added the bok choy into the pan, tossing it all together for another 2-3 minutes. Lastly, I added the Thai chili sauce and stirred for about 1 minute, then added some squeezed lime.

On a Personal Note:

It was really easy to make, and it was ready quickly! For the servings,  I divided the rice between two bowls and topped it with the shrimps, added scallions, chili, peanuts and lime.
