The Cooking Process:

Step One

Preparing the Ingredients:  I started the dish by thinly slicing the scallions, making sure that I kept the greens and whites separate. I then minced the garlic and diced the pepper. Finally, I drained and rinsed the beans.

Step Two

Cooking the Beef: In a large pan over a medium-high heat I added some olive oil and then the beef, breaking it up into pieces and cooking it for 5 minutes. I then seasoned with salt and pepper and removed from pan

Cooking the Chili: After cleaning the pan, I returned it to a medium-high heat and added the scallion whites, poblano pepper and garlic. I cooked this for about 5 minutes, while tossing the pan occasionally until the mixture was lightly browned and tender. Next, I added the Mexican spice ensuring that the vegetables were well coated and then seasoned it  with salt and pepper. I then added the stock, beans, tomatoes, beef, and 1 cup water to the pan and stirred it all to combine. When it was boiling I reduced the heat and let the mixture simmer for about 10 minutes until the liquid had reduced and it had thickened. Lastly, I seasoned with salt and pepper. It was as easy as that! It was ready to go!

Plating and serving: Since it was Super Bowl night, when plating this dish, I put it in a large bowl, suitable for sharing.  I then sprinkled with cheddar and the scallion greens and served with some nachos on the side. Bon appétit!

On a Personal Note:

This was a classic Super Bowl dish by HelloFresh! It was very simple to make, nice to share with some nachos –  and so delicious!
