I love it when we can give a dish a perfect score. This dish from Home Chef was just so good! It was also a little unusual and so much fun to cook. The addition of fresh corn and tomatoes in the chicken filling made for a wonderful flavor combination with the peppers. It was also quite easy to cook in that while I was roasting the poblanos peppers in the oven I simply prepared the chicken filling. I then filled the peppers, topped with some shredded cheddar cheese and returned to the oven for a few minutes. The final thing to do was make the chive-sour cream sauce which was a delicious garnish for this dish. I loved the rustic presentation of this dish as well, keeping the completed peppers on the baking sheet, topping with the sauce and adding some tortilla chips on the side. Another very appealing fact about this dish was that it was only 600 calories per serve so a wonderful healthy option from Home Chef.
