The Cooking Process:

Preparing the Ingredients: I started with rinsing the corn, trimming and thinly slicing the green onions, mincing the garlic and halving the lime and juicing it. I also patted the salmon fillets dry and seasoned the flesh side with salt and pepper and a dash of olive oil.

Making the Salsa: the salsa was so easy! I simply combined the corn, green onions, garlic, lime juice, olive oil and some salt and pepper in a mixing bowl and then set aside to rest.

Cooking the Salmon: Instead of pan cooking the Salmon, as I am not a fan of the fish smell that can leave in the kitchen, I simply cooked it in in a preheated oven at a temperature of 425 F degrees for about 12 minutes until it was tender and ready.

Warming the Tortillas: I wrapped the tortillas in foil, placed directly on an oven rack and baked until they were warmed through, which took about 5 minutes.

Assembling the Tacos and serving: Using a fork, I flaked the salmon and divided it between 4 warm tortillas (2 for each person). I then topped the tacos with the corn salsa, queso fresco crumbles, sour cream and the crispy jalapeños and served immediately.

On a Personal Note:
This type of meal is one of the main reasons why I continue to use meal kit services. The dish was tasty, and so easy to make. Absolutely perfect for when you don’t have the extra energy to cook after a long day at work. The corn salsa was very good and had some lovely fresh flavors. The Salmon was soft and tender. One of the things that made this dish extra special for me was the spicy crispy Jalapeños – they were so good!
