I love balsamic vinegar, so I was very interested in this meal that was included on the Plated menu for this week! What can I say? I loved the combination of the sweet fig jam and the tangy balsamic vinegar. It was like a match made in heaven!
The combination of the great sauce and the chicken meatballs with goat cheese was delicious.
The fresh kale salad was also yummy and had some nice flavors from the pickled onions, Dijon mustard, farro and goat cheese on top. This all combined to create an indulgent meal that was not only delicious but also very healthy and calorie-conscious with only 590 calories count per serving. Perfect!
I also must note that the meal was very easy and enjoyable to cook. The process simply involved cutting the kale and onions, rolling and cooking the meatballs, cooking the farro, mixing the glaze and all other salad ingredients and serving. The meal was ready to serve in 35 minutes!
