Shrimp and Roasted Carrot Tostadas with Crunchy Slaw and Chipotle Crema

For incredible flavors - this dish is very tasty. Both my partner and I even licked our fingers as the flavors were just sensational!

The Cooking Process:

Step One
prep

Preparing the Ingredients – As instructed, I preheated the oven to 450°F. I then rinsed the carrots and cut them crosswise into half-moons. Following this, I rinsed the cilantro and roughly chopped the leaves. I finished the preparation by halving the lime and peeling the onion and thinly slicing it into rings.

Step Two

Roasting the Carrots and Onion –  On a baking sheet I tossed the carrots and onion with half of the spice mix, 1 tablespoon olive oil and ¼ teaspoon of salt and roasted until tender for about 12 minutes.

Step Three

Making the Crema and Slaw –  While the vegetables were roasting, I stirred together the mayonnaise, chipotle paste, juice of ½ lime and some salt and black pepper. In another bowl I placed the slaw mix and sprinkled it with some salt, and combined until the cabbage started to soften which took about a minute. I then added the remaining juice of the lime and ½ tablespoon olive oil and tossed to coat.

Cooking the Shrimp –  I started preparing the shrimp by patting them dry with paper towel and thoroughly seasoning them with the remainder of the spice mix and salt and black pepper. Once they were seasoned, I heated some olive oil in a large pan over a medium heat. When the oil was shimmering, I added the shrimp and cooked, stirring occasionally, until just pink, which only took about 5 minutes.

Step Four

Frying the Tostadas – Using the same pan that I quickly cleaned after the shrimp were cooked, I added 2 tablespoons olive oil and warmed the pan over a medium-high heat. I then added the tortillas in a single layer and fried until golden and crisp on both sides. Once ready I transferred to a paper towel to drain, and immediately sprinkled queso fresco over top.

Step Five

Plating and serving – I divided the hot tostadas between 2 serving plates and then topped with the roasted carrots, onions and the shrimp. I then drizzled over the chipotle crema, topped with the crunchy slaw and garnished with cilantro. It looked beautiful and was so very tasty!! YUMMY!

On a Personal Note:

This meal is an ideal example of one of the main reasons why I love using a meal kit service. For incredible flavors – this dish is very tasty.  Both my partner and I even licked our fingers as the flavors were just sensational! The carrots were amazing – sweet and fresh and of a very high quality. The seasoning was perfect.  This is certainly not a dish that I would ever have thought of making without a company like Plated introducing me to the idea.  As a bonus I thought that the portion sizes of this dish were very generous. The only downside of this dish was that it was quite a complicated recipe and took me longer  than most dishes I have made from meal kits services before. 40 min as opposed to 20-30 min. That was the only negative though and I ended up enjoying the challenge.  Overall, I highly recommend it!
