I have been toying with the idea of becoming a vegetarian for a while now. I really would love to go veggie but I am anxious that maintaining a vegetarian diet while still eating well-balanced and delicious meals throughout the week might be a little hard to maintain. I am a busy mom and I have been using meal kit companies for quite some time now, and I find they are such a huge help in allowing me to prepare tasty and nutritious meals. Lately, I have noticed that many of the meal kit services offer some great vegetarian options, so this week I decided to start the ball rolling and I tried a full box of vegetarian choices. I decided to try the Plated vegetarian meal kit service. Plated seem to offer one of the most attractive meal kits services when it comes to vegetarian meals.
The first thing that you notice when ordering a Plated box is the incredible variety of meals on offer – they have a choice of 20 dishes every week! Plus, they also offer two delicious desserts. I chose three dishes for my delivery – Four-Cheese Pizza, Crispy Mushroom Burgers With White Cheddar and Avocado and Roasted Eggplant Moussaka.
When I got my Plated vegetarian box, I was very excited about starting my new vegetarian adventure! When I opened the box, I found that all the ingredients of each dish were separately packed and labeled in paper bags.
This type of organisation is super convenient as it means there is no sorting required and all that is required of you is putting all the ingredients directly into the fridge. Under the bags there was a large non-toxic ice pack to keep everything beautifully cooled.
The quality of the produce looked wonderful, everything seemed so fresh and colorful and I could not wait to start cooking! The plum tomatoes were red and hard, the zucchini looked amazing and was quite large, and the eggs were farm-fresh and came in a specially designed container. These superb ingredients came as no surprise to me, since it is not the first time I have ordered a Plated box. I have also researched the company and know that Plated delivers only farm fresh and sometimes even organic seasonal produce, and they also include handcrafted specialty items on a regular basis.
Now, to the meals themselves. I cooked each dish separately, following the very detailed and easy to follow recipe pages, and here are my thoughts on each one:
Name of the dish: Four-Cheese Pizza

This pizza was just perfect!
The four-cheese blend was the best and included fontina, mozzarella, provolone and parmesan cheese. Both my husband, my young daughter and I loved the topping of fresh cut plum tomatoes and basil that was lightly drizzled with some olive oil. It gave the dish a lovely freshness. It tasted like a gourmet pizza from a high-end Pizzeria. Simply amazing!
The only thing that I thought was missing was something to accompany the dish like a nice fresh green salad on the side.
Name of dish: Crispy Mushroom Burgers with White cheddar and Avocado
Cooking time: 30 minutes
Taste ranking: 96
To be honest, I have always found it a little tricky to cook a perfect burger, especially if it’s a veggie burger. A good burger needs to stay together yet remain moist and tender inside. This mushroom veggie burger was a treat and ticked all the boxes! It had an earthy taste from the mushrooms and thyme and a nice edgy taste from the parmesan cheese. The brioche buns were excellent and were quite crispy after being lightly toasted. I love avocado, so for me the avocado-pesto mash topping was just perfect. I also loved the salad which was provided as a side dish. The leaves were fresh and had a great radish-like flavor, so it really needed little dressing apart from some olive oil, lemon, salt and pepper.
Name of the dish: Roasted Eggplant Moussaka
Cooking time: 30 minutes
Taste ranking: 92
This was another great vegetarian dish and was a real comfort food dish. To be honest, the cooking process was lengthy, taking about 45 minutes to cook. Apart from the time though, it was a very easy recipe to follow. Basically, preparation involved roasting the vegetables which were medium size eggplants, zucchini and potatoes and making the tomato sauce and the Greek yogurt sauce.
The ingredients were then layered in the tin that was provided as part of the kit. The portion of the dish was quite generous, so I had leftovers for lunch the following day. A wonderful dish that was healthy, delicious and full of memories from my Greek vacation in Santorini.
So, who is it for?
Plated offers a great vegetarian meal kit alternative, and it is a wonderful option for vegetarians who would like to broaden their horizons when it comes to their evening meals. I really enjoyed each dish I made from my Plated vegetarian box. I must mention again the great quality of the ingredients they use and the ease of cooking these meals.
