When I picked this salad dish from the Sun Basket Paleo Menu I was a little dubious as to if it would be enough for an evening meal. I need not have worried, as the serving size was very generous, and the salad was quite substantial. We were delighted with it! When it comes to steak, Sun Basket does offer the option of upgrading to different cuts of meat such as rib-eye or fillet mignon, but I decided to stick with the sirloin and was not disappointed with my choice. This dish was easy to make, taking only 25 minutes in total and the flavors were heavenly. We loved the addition of the ready made chermoula sauce which had a lovely zing to it and the pickled purple onion added yet another layer of flavor. The sweet potato we received was quite large and I cooked this in the oven rather than the pan and it turned out perfectly. Finally, the prepared and trimmed organic kale was fresh and crispy and a lovely base for this salad.
