This meal is bursting with the superfoods of fresh kale and red quinoa. There are many nutritional benefits found in red quinoa.
It is high in proteins and fibers, it has a low glycemic Index which is good for blood sugar control, and it is also gluten free.
The ingredients, which is to be expected with Terra’s Kitchen, were of a very high quality. The pre-cut kale looked green and fresh, and the pre-cut mushrooms were also beautiful.
The meal was very easy to cook – you simply cooked the quinoa and sautéed the mushrooms and kale. The result was a huge bowl of quinoa and veggies! It was very tasty and felt very healthy, but I did think it needed a little more spice in the flavor combination. I fixed it by adding some more crushed red peppers I had at home.
