This braised chicken dish had some great Mediterranean flavors, and felt like a lovely, healthy dinner! As you know, at times chicken breast can be quite boring and offer little out of the ordinary in way of taste.
However, this was not the case with this Green Chef meal, which is both Paleo and gluten-free. First, the side salad was delicious. It was made with fresh organic kale and red cabbage leaves tossed with sunflower seeds and a zesty white balsamic vinaigrette. It was a perfect spring-time salad. The seasoning of the chicken was simple but very appetizing. Olive oil, chopped dill, salt, and pepper. The thing that did the trick here and kept the chicken tender and juicy was the fact that it was cooked with the veggies and vegetable broth. The result was lovely and super satisfying.
This was another meal that was delicious but also healthy, and ideal for those who are looking to manage their weight. The dish had only 420 calories per serving and was a great example of the types of healthy but satisfying dishes that can be found on the Green Chef Paleo menu.
