My Honest Review:
To be honest, the cooking process was lengthy, and it did take about 45 minutes to prepare. But aside from the time, it was quite an easy recipe to follow. I started by roasting the vegetables. The vegetables consisted of medium size eggplants, zucchini and potatoes. While the vegetables were roasting I simply made the tomato sauce and the Greek yogurt sauce. I then just layered it all in the tin that was supplied as part of the kit.
The portion was quite big, like most recipes by Plated, so I had leftovers for lunch the following day which is always a treat! A wonderful dish that was healthy, delicious and full of memories from my Greece vacation last summer.
