On top, the almonds added a nice crunch that really brings the dish together.
With the rice, veggies, and beans, we felt satisfied but not overfull after enjoying this meal. Plus, it was quick and easy to prepare, taking around 30 minutes.
Mediterranean Baked Veggies with Couscous, Almonds & Feta
This Mediterranean-style dinner is the perfect meal kit for a date night at home or a tasty dinner for one.
You might think of roasted asparagus as a side dish, but this recipe turned it into a star. Plus, we love that it combines whole grains and veggies to make a hearty vegetarian meal.
Our meal kit included vibrant asparagus and fresh, tasty-looking cherry tomatoes. The burst tomatoes added a great pop of acid alongside the hearty asparagus. Adding them to a bed of couscous was the perfect complement to these bright veggie flavors. We loved the feta atop this dish, which gave it a great saltiness that took it to the next level.
Even though the dish looks fancy, it just took 30 minutes to make. You simply chop up the asparagus, put the veggies in the oven, and prepare the couscous – then dinner is served!
Southwest Stuffed Zucchini Boats with Pico de Gallo, Avocado Crema, & Cilantro
We were impressed with the quality of the zucchini we received. They made the perfect vehicle for the flavor-packed rice full of tasty spices. As a bonus, they made the dish healthier and low on carbs.
The zucchini boats are stuffed with a delicious mix of seasoned rice and pepper jack cheese, making them taste indulgent and satisfyingly filling. The avocado crema and pico de gallo added just the right touch of freshness to make this dish sing.
The prep time was quick, and the whole dish came together in 30 minutes. Plus, the included hot sauce allows you to add more heat!
