We had to personally dig into Hello Fresh vegetarian recipes and give these meals a real taste for ourselves. Here’s a little taste of our vegetarian recipes that arrived from the Hello Fresh meal kit delivery service.

Philly-Style Mushroom sandwiches

Hello Fresh Philly-Style Mushroom sandwiches

If you love the texture and taste of Philly steak sandwiches, you can have it all, but it is a healthier alternative.

This recipe is free of steak and replaced with hearty mushrooms for texture and taste, offers a zesty Dijon mustard sauce and caramelized onions for additional flavor. All packed on a toasty baguette with butter and fresh potato wedges.

These sandwiches were easy to make, vegetable-centric, and a twist to a traditional classic recipe! Only 10 minutes of prep time and overall 35 minutes of cooking to put this dish together. A fancy sandwich in a pinch!

Our Thoughts?

It’s hard to pick a favorite, but this might be it. Every part of the recipe was fantastic. We loved the texture of roasted mushrooms and their use to replace the protein, which offers an excellent alternative to steak.

Mediterranean Baked Vegetables Over Couscous

If you’re in the mood for a Mediterranean-style dinner, here’s one meal kit to try: Mediterranean-style baked vegetables over couscous. Perfect for a dinner for one on a casual night or a serving for two on a special evening at home.

What’s great about this dish is the combination of whole grains and veggies to offer a hearty vegetarian meal.

The meal-kit came with vibrant veggies such as asparagus and sprinkled with cherry tomato with feta cheese over a bowl of Israeli couscous rice. The thyme and garlic gave the dish a strong flavor. All you need is to chop up the asparagus and prepare the couscous — that’s the majority of the work since there’s little time needed to cook! And just add salt and pepper to taste.

This dish looks fancy and only takes 30 minutes to make. Perfect for a middle of the week dinner, when you want a recipe that’s both delicious and quick to cook. Just like many of their recipes, they go well with a fresh salad on the side!

Get ready to round up your taste buds because this takes everything from a fantastic amount of Southwest food into a vegetarian-friendly recipe. You can get all the best parts of the Southwestern sizzle all in this beautiful dish and one of our favorite recipes.

These zucchini boats are stuffed with pepper jack cheese, topped with fresh pico de gallo, black bean, avocado crema, cilantro, topped off with a dollop of sour cream and a drizzle of hot sauce.

It only took a total of 30 minutes to make this dish and the quickest prep time — only five minutes! 

Our Thoughts?

We loved the creative twist of using delicious zucchini free of starchy potato to make the dish extra healthy and low on carbs. The overall recipe was easy to make by carving out the zucchini and whipping up the special creamy side. The pico gives it the perfect amount of heat, and if you want to crank it up, there’s always extra hot sauce!
